Non ester based flavours

Hey guys im looking for some non ester based flavours.
Ones like
Coffee
vanilla beans
bergamot

Any ideas for fruit flavours how they could be produced without the sugar from the fruit being a problem
For lime i have already looked at kaffir lime.

Any ideas are helpful

Also has any one tried sucralose for sweetener and how have they found it? What are your favourite naturalish sweetners/flavours?

 

I'm a simple guy. Esters?

Tried some of the organic juices available?

 

Esters are often what we call artificial flavours, they work by adding carbolic acid to an alcohol solution. The downside of most organic flavours is the use of Ethanol in the extraction/ also used as a carrier. I'm trying to make juices without most of the less loved compounds.

 

Have a look at the organic juices out there. No idea of the extraction methods used though.
